Vinification Process:
The grapes are mainly selected in an area called “Collado”, located between 550 and 600 meters high. This area is formed of mainly clayey-ferrous soil, with a high proportion of gravel. Once the grapes have been carried into the wine-cellar, and after a wide analytical control, they are stemmed, pressed and put into the vats. The low temperature maceration process of the grapes takes from 8 to 12 hours to get the substances responsible of its attractive colour in the must.
