Vinification Process
Has been produced with the best grapes from the oldest vineyards and with the lowest yields.

The grapes are carefully selected on the fields; plots are head training vine and handpicked by our growers. Our extreme climate and poor soil do the rest.

Stemmed and crushed grapes ferment at 28°C. The wine macerates with the skins, after maceration the wine ages for 10 months in new French oak barrels from different coopers. Afterwards, it bottles and rests for six months without clarification nor tartaric stabilization. That is why sediments that do not affect the organoleptic quality of wine can appear.

Ageing
Aged 10 months in new French barrels. 6 months of bottle refining.
