Grape Variety
75% Macabeo, 25% Chardonnay

Harvest
1st and 2nd week of September.

Vinification Process
The grapes are carefully selected on the vineyards with lower yields; plots are head training vine and handpicked by our growers and crop for dry farming. The age of the vines is never less than 15 years.

The varieties are processed separately. The grapes are destemmed and lightly crushed. The flower must obtained is cooled to 10°C for decanting. The alcoholic fermentation is slow and never exceeds 16 °C in order to extract all qualities of the must. Once prepared the cuvée, we look for the best moment to carry out the fermentation in bottle during February and March. The process to elaborate our Cava is carried out following a traditional and handmade system.

Taste

Ageing
The cava ages 9 months in oak,
El cava permanece en crianza durante 9 meses, in this way the yeasts contribute all the aromatic character of the cava.

Alcoholic content: 11 – 12% vol.

Food pairing: A perfect complement to aromas and flavours of the new gastronomic expressions. Pairs well with selfish, meats, cured cheeses and game dishes.
